Bomb Ass Chicken Salad

I had leftover roasted chicken from dinner so I thought I’d whip together some chicken salad for lunch the next day. Oh boy. It was super awesome.

I’m calling it “Middle Eastern’ish Chicken Salad.” Make it.

1 roasted chicken breast and 1 roasted chicken thigh, chopped

3 tablespoons mayonaise

1 tablespoon harissa (I used some from Cafe Mogador in Manhattan but you can make your own with ground chillies, cumin, olive oil and salt)

1 teaspoon dried thyme

1 teaspoon cumin

1 tablespoon capers

salt and pepper to taste

Mix together and serve with crackers or in a whole wheat pita.
